Abstract

Aflatoxin is a secondary metabolite substance produced by Aspergillus flavus fungus living on the grain. The substance is very toxic, which may cause health problem when consumed by human or by animal. Of the twelve aflatoxin members, the B 1-aflatoxin was reported as the most prevalence in Indonesia, and it was also the most toxic. Therefore, B 1-aflatoxin was used as a criterion for the maximum tolerable limit of aflatoxin content in food and feed stuff. Aflatoxin B 1 contamination was reported on groundnut grains sold in the retail traditional markets throughout Indonesia. The contaminated grains were noted derived from the nationally produced as well as from the imported ones. The aflatoxin contamination increased as the grain of groundnut reached the final retail markets destination. Contaminated grain processed into various food retained the aflatoxin in a toxic form. The negative effect on health from consuming food contaminated by aflatoxin must be minimized. The government of Indonesia had established food safety regulation regarding aflatoxin contamination, but prevention through the proper cultural practices and post harvest handling of groundnut, were equally important measure. ABSTRAK Aflatoxin adalah senyawa metabolit sekunder yang dihasilkan oleh jamur Aspergillus flavus. Senyawa ini bersifat toksik yang mengganggu kesehatan manusia dan ternak, antara lain melalui gangguan fungsi hati. Di antara dua belas macam aflatoxin, aflatoxin B 1 paling banyak dijumpai di Indonesia dan merupakan senyawa yang paling berbahaya sehingga digunakan sebagai kriteria ambang batas maksimum aflatoxin dalam bahan pangan dan pakan. Kontaminasi aflatoxin B 1 yang tinggi dilaporkan pada biji kacang tanah yang berada pada pedagang pengecer di pasar tradisional di banyak tempat di Indonesia. Biji kacang tanah terkontaminasi aflatoxin B 1 berasal dari hasil panenan pertanaman di Indonesia dan juga berasal dari impor dan penggunaannya untuk keperluan konsumsi. Kontaminasi aflatoxin pada biji kacang tanah asal dari dalam negeri dan impor meningkat menjadi tinggi setelah sampai pada pedagang pengecer. Makanan berbahan baku kacang tanah yang terkontaminasi aflatoxin dilaporkan juga mengandung aflatoxin B1 dengan beragam level. Bahaya gangguan kesehatan oleh dikonsumsinya kacang tanah terkontaminasi aflatoxin perlu diminimalisasi dengan cara menetapkan kebijakan tentang penanganan produk terkontaminasi aflatoxin dan teknologi anjuran proses produksi kacang tanah bebas aflatoxin.
